12 Minute Sweet Potato Hash Browns


Sometimes with breakfast I want yummy potatoes...but they are pure starch, and not healthy.

Sweet Potatoes to the rescue!

But who has a whole hour to bake them?? Or 20 minutes to boil and mash them?

In just 12 minutes total cooking time, you can have delicious sweet potato hash brown.

2 Sweet Potatoes - Wash and cut off ends/eyes. (Don't peel)
Chop very small. Cut potatoes in half the long way, then in half again (quarters)
Put pan on the stove with medium heat, and olive oil in bottom.
Then cut Sweet Potatoes into small half-inch pieces.
Toss them in the pan.
Let them saute a minute or two.
Add seasonings. (My favorites: Tumeric, Garlic Powder, Fresh ground pepper, cumin)
Run some water from your sink as hot as possible.
Add about a half cup to the bottom of the pan, and cover it, to steam the potatoes.
Let it cook for about 8-9 minutes, until tender.

Your hash browns are DONE.

If you have extra time, add an onion and red or yellow pepper to the olive oil at the beginning.

Delicious, quick, healthy, nutritious, and VEGAN!

Myastenia Gravis means less cardio, more healthy eating!

I stared this blog to inspire me to exercise more, and I was struggling with the intense impact it was having on my body. Turns out there was a reason for it. Myasthenia Gravis... a tricky little auto-immune disease which attacks the muscle receptors and makes extensive physical exercise almost impossible.

So now that I'm back to low impact walking and yoga, I've focused more on a healthy diet as a way to get my body on the road to fitness. I recently read The Kind Diet, by Alicia Silverstone, and it had inspired me to get back into being a vegetarian, and to try and go the distance and become a vegan. I know it won't be easy, but it's going to be fun to come as close as I possibly can.

So here's to the changing motive for this blog, and a shout out to sisters, who I hope to share recipes with! If you make something delicious and vegan/vegetarian, please share it here!

My Very First Post - Can I really keep running??

Hello Ladies!!

So I started a fitness and diet experiment on Wednesday, one that I really hope I can keep up. I have decided to cut out all sugars and starches, and focus on cardio more than I ever have before. I've been good about Yoga and stretching, but in order to lose weight and take off all the "cute" belly fat I've had on my body since I was 10, the time has come to GET SERIOUS.

So I started jogging/running on a treadmill on WED, and I did it again on FRI, and today, saturday, I am so so sore and tight in my hips I don't know if I can keep it up. Running is such a high impact sport, and I have so many issues with my hips...I don't know if its a good idea to keep it up? Both of you ladies run? Did you find that your body was sore and tight when you first started? Did you keep it up? How can I tell that I am doing something good for my body if it causes me a lot of pain in my hips afterward?

I feel like if I stretched about 2 hours after each run, I could smooth out the tension I create when I'm running, but I don't have the time for all that! Let me know if you have any running stories that might help me power through this little moment of frustration with the side effects of working out!
